  • 1 can Diced Tomatoes, with juice Adds moisture and rich flavor.
  • 2 cups Beef Broth Use low-sodium for healthier option.
  • 8 oz Pasta (penne or rotini) Whole grain or gluten-free options are healthier.
  • 1 cup Shredded Cheese (optional) For a creamy texture, can be omitted.
  • Salt and Pepper Season to taste.
  • Chopped Cilantro (optional) For garnish and fresh flavor.

Preparation
  1. Brown the ground beef: Heat a large pot over medium heat and add ground beef, diced onion, and minced garlic. Cook until beef is browned. Drain excess fat.
  2. Add seasoning and tomatoes: Sprinkle taco seasoning over browned meat, stir to combine, add diced tomatoes and beef broth. Bring to simmer.
  3. Cook the pasta: Add pasta to the pot, stir well, cover, and cook for 10-12 minutes, stirring occasionally until pasta is al dente.
  4. Stir in cheese: If using cheese, add it to the pot once pasta is cooked, stir until melted and well integrated.
  5. Season: Taste and adjust with salt and pepper as needed.
  6. Serve and garnish: Serve hot, garnished with cilantro if desired.

Notes

Great for meal prep. Leftovers can be stored in airtight containers in the fridge for up to three days or frozen for longer storage. Swap ground beef for turkey or chicken for a lighter option.
