  • 2 cups vanilla ice cream Choose a lighter option, like low-fat or yogurt-based ice cream, to keep your treat lower in calories.
  • 1 cup milk Almond milk or skim milk can be used for a lighter option.
  • 1 cup cherry juice Opt for pure, unsweetened cherry juice to avoid unnecessary sugars.
Additions
  • 1/2 cup cherries, pitted and chopped Fresh cherries provide flavor and fiber.
  • 1 tablespoon sugar (optional) Consider leaving this out or substituting with a sugar alternative.

Preparation
  1. In a blender, combine 2 cups of vanilla ice cream, 1 cup of milk, and 1 cup of cherry juice until smooth.
  2. Stir in 1/2 cup of chopped cherries carefully, ensuring they remain chunky.
  3. Pour the mixture into popsicle molds, leaving space at the top for expansion.
  4. Insert popsicle sticks into the molds and freeze for at least 4 hours or until solid.
  5. To release, run warm water over the outside of the molds for a few seconds to loosen the creamsicles.

Notes

These creamsicles can be made ahead for a fun snack. Store in a sealed container in the freezer for several weeks. For variations, try using other fruit juices or add a touch of vanilla extract.
