Ingredients
  

Cheese Base
  • 8 oz Camembert or Brie cheese, well-aged Use a mix of both types for best flavor
  • 4 tbsp unsalted butter Room temperature
Seasonings and Add-Ins
  • 1 small onion, finely chopped
  • 1 tsp sweet paprika
  • 1/2 tsp caraway seeds
  • 2-3 tbsp wheat beer Adjust for desired consistency
  • to taste Salt and pepper
  • chopped Fresh chives For garnish

Method
 

Preparation
  1. Remove the rind from the Camembert or Brie and cut the cheese into small pieces.
  2. In a mixing bowl, combine the cheese, butter, finely chopped onion, paprika, and caraway seeds. Mix until smooth and well combined.
  3. Gradually add the beer, one tablespoon at a time, until you reach the desired consistency. Season with salt and pepper to taste.
  4. Transfer the Obatzda to a serving dish and garnish with fresh chives. Serve immediately with pretzels or bread.

Notes

Obatzda is best enjoyed fresh. Can be stored in an airtight container in the refrigerator for up to three days. Stir in a bit of beer or water if it thickens.
