Preparation
- Gather all ingredients. Dice the onion, mince the garlic and ginger, slice the carrots, and dice the bell peppers.
Cooking
- In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until mostly done, about 5–7 minutes.
- Add the diced onion, minced garlic, and ginger to the pot. Sauté until onions are translucent, about 3–5 minutes.
- Stir in the ground turmeric, cumin, and coriander. Cook for another minute.
- Slowly pour in the chicken broth and coconut milk, stirring to combine. Allow to simmer gently.
- Add sliced carrots, diced bell peppers, and spinach or kale to the pot. Simmer for about 15–20 minutes or until vegetables are tender and chicken is fully cooked.
- Taste the soup and add salt and pepper as needed.
Serving
- Ladle the soup into bowls and garnish with fresh cilantro and a squeeze of lime if desired. Enjoy!
