Method
 

Preparation
  1. Gather all ingredients. Dice the onion, mince the garlic and ginger, slice the carrots, and dice the bell peppers.
Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until mostly done, about 5–7 minutes.
  2. Add the diced onion, minced garlic, and ginger to the pot. Sauté until onions are translucent, about 3–5 minutes.
  3. Stir in the ground turmeric, cumin, and coriander. Cook for another minute.
  4. Slowly pour in the chicken broth and coconut milk, stirring to combine. Allow to simmer gently.
  5. Add sliced carrots, diced bell peppers, and spinach or kale to the pot. Simmer for about 15–20 minutes or until vegetables are tender and chicken is fully cooked.
  6. Taste the soup and add salt and pepper as needed.
Serving
  1. Ladle the soup into bowls and garnish with fresh cilantro and a squeeze of lime if desired. Enjoy!
