Ingredients
  

For the crust
  • 1 cup chocolate cookie crumbs Provides a rich and sweet flavor.

For the cheesecake filling

For the blueberry sauce
  • 1 cup fresh blueberries Provides fruity flavor and antioxidants.
  • 2 tablespoons sugar Enhances the sweetness of blueberries.
For the topping
  • 1/2 cup chocolate chips Melted for layering over the crust.

Method
 

Preparation
  1. In a bowl, mix the chocolate cookie crumbs and melted butter until combined and press into the bottom of a lined 8×8 inch pan.
  2. Melt the chocolate chips in a microwave or double boiler and spread a thin layer over the cookie crust. Allow it to set.
  3. In a mixing bowl, beat the cream cheese and powdered sugar until smooth.
  4. Whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.
  5. In a saucepan, heat blueberries and sugar until the blueberries burst and a sauce forms.
  6. Gently fold half of the blueberry sauce into the cream cheese mixture.
  7. Spread the cream cheese filling over the chilled chocolate layer and swirl in the remaining blueberry sauce.
  8. Refrigerate for at least 4 hours before cutting into bars.

Notes

For a healthier option, substitute heavy cream with Greek yogurt. Store in an airtight container in the fridge for up to a week. Can be frozen for up to three months.
