- In a bowl, mix the chocolate cookie crumbs and melted butter until combined and press into the bottom of a lined 8×8 inch pan.
- Melt the chocolate chips in a microwave or double boiler and spread a thin layer over the cookie crust. Allow it to set.
- In a mixing bowl, beat the cream cheese and powdered sugar until smooth.
- Whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.
- In a saucepan, heat blueberries and sugar until the blueberries burst and a sauce forms.
- Gently fold half of the blueberry sauce into the cream cheese mixture.
- Spread the cream cheese filling over the chilled chocolate layer and swirl in the remaining blueberry sauce.
- Refrigerate for at least 4 hours before cutting into bars.
Notes
For a healthier option, substitute heavy cream with Greek yogurt. Store in an airtight container in the fridge for up to a week. Can be frozen for up to three months.
