  • 2 cups dried navy beans No need to soak if using slow cooker.
  • 3 pieces carrots, diced
  • 2 stalks celery, diced
  • 1 piece onion, diced
  • 1/2 bulb fennel, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 leaves dried bay leaves
  • 1 1/4 tsp salt Adjust according to taste.
  • 1 tsp dried thyme
  • 1/2 tsp chili flakes For a light kick.
  • 2 tbsp olive oil Add at the end for richness.

Method
 

Preparation
  1. Stir water, navy beans, carrots, celery, onion, fennel, garlic, tomato paste, bay leaves, salt, thyme, and chili flakes in the slow cooker insert.
Cooking
  1. Cook on low for 6 hours.
  2. Stir olive oil into soup before serving.

Notes

This soup is gluten-free and low in added sugar. For extra flavor, consider adding chopped kale or spinach in the last 15 minutes of cooking. Adjust portion sizes for weight loss and consider healthy serving options like salad or Greek yogurt.
