Preparation
  1. Wash all vegetables thoroughly. Cut cherry tomatoes in halves and slice cucumbers into rounds or thirds. Cut mozzarella cheese into bite-sized cubes.
Assembly
  1. Take a skewer and start with a cherry tomato. Add a cucumber slice followed by a cube of mozzarella cheese. Repeat until filled, alternating cherry tomato colors if desired.
Finishing Touches
  1. Drizzle olive oil over the skewers on a serving platter.
  2. Sprinkle with salt and pepper. Optionally add herbs like basil or oregano.

Notes
