Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine flour, cocoa powder, baking soda, and salt.
- In a separate bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Gradually mix in the dry ingredients until just combined.
- Fold in the chocolate chips and marshmallows.
Baking
- Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes or until set.
- Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to a week. Can be frozen for up to three months. For added fun, stack two cookies with ice cream in between and serve as a dessert sandwich.
