Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients into the wet mixture. Stir gently until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, testing for doneness with a toothpick.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a healthier version, consider substituting half of the granulated sugar with honey or maple syrup. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
