Preparation
- In a large bowl, beat together the vegetable oil, apple sauce, eggs, sugar, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
Mixing
- Gradually add the dry ingredients to the wet ingredients, mixing until smooth. Don’t overmix the batter.
Baking
- Pour the batter into a greased 9x13-inch cake pan and assemble the apple slices on top of the cake.
- Bake at 350°F for 45 minutes, or until a toothpick comes out clean. Don’t bake for too long, because it can get dry.
Serving
- Once the cake has cooled, dust with confectioners' sugar before serving.
Notes
This cake is perfect on its own or served with Greek yogurt or low-calorie ice cream. Store leftovers in an airtight container for up to a week or freeze slices for up to three months.
