Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy and light in color.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually mix the dry ingredients into the creamed butter and sugar mixture.
- Fold in the drained crushed pineapple.
Baking
- Using an ice cream scoop or tablespoon, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Press a maraschino cherry into the center of each cookie dough scoop.
- Bake for 10-12 minutes until golden brown.
- Drizzle caramel sauce over the cookies while they are still warm.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Consider using less sugar or a sugar substitute for a lighter option. You can also experiment with whole wheat flour or almond flour for variations.
