  • 2 cups cooked pasta Use your choice of pasta.
  • 1 cup sweet corn Can be fresh, frozen, or canned.
  • 1/2 cup cotija cheese, crumbled Can substitute with feta if cotija is unavailable.
  • 1/4 cup mayonnaise Regular or low-fat.
  • 1/4 cup sour cream Greek yogurt can be used for a lighter option.
  • 2 tablespoons lime juice Freshly squeezed lime juice is best.
  • 1 tablespoon chili powder Adjust based on spice preference.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Season to your liking.
  • 1 tablespoon fresh cilantro, chopped For garnish before serving.

Preparation
  1. In a large bowl, combine the cooked pasta, sweet corn, and cotija cheese.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper.
  3. Pour the dressing over the pasta mixture and toss to combine.
  4. Adjust seasoning if necessary.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh cilantro before serving.

Notes

Perfect for meal prep, can be stored in an airtight container in the refrigerator for up to 3 days. Not recommended for freezing.
