- In the bowl, whisk together cornbread mix, eggs, and milk until smooth.
Combining Ingredients
- Stir in black beans, corn, salsa, cumin, chili powder, and half of the shredded cheese.
- Mix until all ingredients are well combined.
Baking
- Pour the mixture into a greased 9x13 inch baking dish.
- Spread the mixture evenly across the dish.
- Sprinkle the remaining cheese on top.
- Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
Serving
- Allow the casserole to cool for a few minutes.
- Garnish with chopped green onions and cilantro before serving.
Notes
