  • 2 pieces ripe mangoes, peeled and julienned
  • 1 cup shredded cabbage
  • 1 piece red bell pepper, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
Dressing
  • 2 tablespoons olive oil
  • 2 pieces limes, juiced
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the mangoes, cabbage, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the slaw and toss to combine until all ingredients are evenly coated.
  4. Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

Mango slaw can be stored in an airtight container in the refrigerator for up to 3 days. For a lighter dressing, substitute olive oil with a yogurt-based dressing made from plain Greek yogurt.
