Ingredients
  

For the Mango Chicken
  • 1.5 tablespoons avocado oil or olive oil for cooking
  • 1 pound chicken breast, trimmed use lean chicken for a healthy option
  • 0.25 teaspoons turmeric
  • 0.25 teaspoons garlic powder
  • 0.25 teaspoons cayenne
  • 1 large ripe mango, cut into 1-inch chunks adds natural sweetness
  • 2 tablespoons lime juice for flavor
  • 0.5 red onion, thinly sliced (about 1 cup)
  • Salt and pepper to taste
For the Wraps
  • Bibb or romaine lettuce for wraps
  • 1 cup carrots, thinly sliced
  • 1 large zucchini, thinly sliced and cut into ~3 inch pieces
Optional Toppings
  • Cilantro
  • Extra slices of fresh mango
  • Extra lime juice

Method
 

For the Mango Chicken
  1. Heat oil in a large skillet over medium heat.
  2. Add chicken, turmeric, garlic powder, and cayenne. Cook until the chicken is browned, about 5 minutes.
  3. Add mango chunks, onion, and lime juice. Cook for another 5 minutes or until chicken reaches an internal temperature of 165°F.
  4. Remove from heat, let cool slightly, and slice the chicken.
To Assemble the Wraps
  1. Place lettuce leaves on a plate.
  2. Top with carrots and zucchini slices.
  3. Add mango chicken mixture.
  4. Optionally, garnish with cilantro, extra mango slices, and a drizzle of lime juice.

Notes

Store cooked mango chicken in an airtight container in the fridge for up to 3–4 days. Keep lettuce and wet toppings separate until ready to eat.
