- Dice the mango and avocado into bite-sized pieces.
- Chop the red capsicum peppers, red onions, and cucumber finely.
- In a large bowl, combine the mango, avocado, red capsicum peppers, red onions, and cucumber.
- Chop the coriander/cilantro and add it to the bowl.
- Squeeze the juice of one lime over the ingredients.
- Drizzle with olive oil and season with salt and red chili flakes to taste.
- Toss gently to mix everything together.
- Serve immediately.
Notes
Store the ingredients separately to prevent the avocado from browning. This salad is best enjoyed freshly made but can be prepped in advance for convenience.
