  • 1 ripe Mango
  • 1 ripe Avocado
  • 1 Red capsicum pepper
  • 1 small Red onion
  • 1 Cucumber
  • to taste Salt
  • 1 tablespoon Juice of Lime
  • to taste Red chili flakes (optional)
  • 2 tablespoons Olive oil
  • 1 Fresh Coriander/cilantro Chopped

Method
 

Preparation
  1. Dice the mango and avocado into bite-sized pieces.
  2. Chop the red capsicum peppers, red onions, and cucumber finely.
  3. In a large bowl, combine the mango, avocado, red capsicum peppers, red onions, and cucumber.
  4. Chop the coriander/cilantro and add it to the bowl.
  5. Squeeze the juice of one lime over the ingredients.
  6. Drizzle with olive oil and season with salt and red chili flakes to taste.
  7. Toss gently to mix everything together.
  8. Serve immediately.

Notes

Store the ingredients separately to prevent the avocado from browning. This salad is best enjoyed freshly made but can be prepped in advance for convenience.
