Preparation
  1. In a bowl, mix the coconut milk, chia seeds, honey or maple syrup, and vanilla extract. Stir well and let sit for about 10 minutes.
  2. After 10 minutes, stir again to break up any clumps and ensure the chia seeds are evenly distributed.
  3. Cover and refrigerate for at least 2 hours or overnight.
Serving
  1. Once the chia pudding is set, layer it in serving cups with the pureed mango and dragon fruit.
  2. Top with fresh fruit if desired. Serve chilled.
