Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs and vanilla extract until combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the Lucky Charms cereal.
Baking
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Frosting
- For the frosting, beat the butter until creamy, then gradually add powdered sugar, milk, and vanilla. Mix until smooth.
- Frost the cooled cookies with the vanilla buttercream and sprinkle extra Lucky Charms on top.
Notes
These cookies are best enjoyed slightly warm, fresh out of the oven, or at room temperature. For a lighter option, consider cutting the cookies in half. Enjoying them with a piece of fruit can also add beneficial fiber.
