Preparation
- Shred the cooked chicken if not done already. Use leftover or rotisserie chicken to save time.
- In a large bowl, combine the shredded chicken, cottage cheese, blackberries, and chopped celery. Gently fold to mix without breaking the blackberries.
- In a separate small bowl, mix the mayonnaise and lemon juice until smooth to create a light dressing.
- Pour the dressing over the chicken mixture and stir until well combined, ensuring all ingredients are coated.
- Add salt and pepper to taste and mix to distribute evenly.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled on its own or on lettuce leaves.
Notes
For different flavors, add chopped nuts or substitute blackberries with low-sugar fruits like raspberries or strawberries. Consider using Greek yogurt instead of mayonnaise for a lighter dressing.
