Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 tablespoon dried culinary lavender
  • 1/4 teaspoon salt
For the Lavender Buttercream
  • Lavender buttercream (for filling)
  • Additional powdered sugar (for dusting, optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the lemon juice and lemon zest.
  4. In another bowl, whisk together the flour, cornstarch, dried lavender, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until well combined.
  6. Roll the dough into balls and place them on a baking sheet. Flatten each ball slightly with the bottom of a glass.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Let cool completely before spreading lavender buttercream on one cookie and topping with another.
  3. Optionally, dust with powdered sugar before serving.

Notes

Serve these cookies at room temperature. They pair well with tea, coffee, or a light fruit salad. For healthier serving, offer with plain Greek yogurt and fresh berries.
