Dry Ingredients
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons dried culinary lavender
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add the egg, lemon zest, lemon juice, lavender, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Drop tablespoon-sized dough balls onto the prepared baking sheet about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 4 days. Freeze for up to 3 months for longer storage. For a healthier option, use whole wheat flour and reduce sugar.
