Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the egg, lemon zest, lemon juice, lavender, and vanilla extract to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
- Drop tablespoon-sized dough balls onto the prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to 4 days. Freeze for up to 3 months for longer storage. For a healthier option, use whole wheat flour and reduce sugar.
