  • 1 tablespoon Olive Oil Heart-healthy fat
  • 1 tablespoon Lemon Juice Juice of one lemon
  • 1 teaspoon Dried Oregano Adds aromatic Mediterranean flavors

For the Bowl
  • 4 pieces Boneless, Skinless Chicken Breasts Keeps the dish low in fat
  • 1 cup Chickpeas Packed with fiber and protein
  • 2 cups Quinoa or Rice Quinoa is gluten-free
  • 1/2 cup Feta Cheese Adds creaminess and flavor
  • 1/4 cup Fresh Herbs (Parsley or Cilantro) For garnish

Method
 

Preparation
  1. In a bowl, combine the olive oil, lemon juice, oregano, salt, and pepper to make the marinade.
  2. Marinate the chicken breasts in the mixture for at least 15 minutes, or up to overnight for more flavor.
Cooking
  1. Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 6-7 minutes per side.
  2. Let the chicken rest for a few minutes before slicing it thinly.
Assembly
  1. In serving bowls, layer the quinoa or rice, followed by chickpeas, sliced chicken, and crumbled feta cheese.
  2. Garnish with fresh herbs and squeeze extra lemon juice on top if desired.

Notes

For a healthier option, consider using cauliflower rice. Store marinated chicken separately if meal prepping for freshness.
