Ingredients
  

For the popsicle base
  • 1 1/2 cups cubed pineapple Adds sweetness and is low in calories.
  • 1 cup diced mango Rich in vitamins A and C, and a good source of fiber.
  • 1/2 cup coconut milk Provides creaminess and is dairy-free.
  • 2 1/2 cups strawberries Low in sugar and high in vitamin C.
  • 1/4 cup orange juice Enhances flavor, use fresh-squeezed.
  • 1 tablespoon honey or agave (optional) Use to adjust sweetness if desired.

Method
 

Preparation
  1. Blend the cubed pineapple, diced mango, and coconut milk in a blender until smooth. Adjust consistency with more coconut milk if needed. Taste and add honey or agave if preferred.
  2. In another blend, include strawberries, orange juice, and optional sweetener. Blend until smooth and taste to adjust sweetness.
  3. Layer the pineapple mixture and strawberry mixture into the popsicle molds for distinct layers.
  4. Insert popsicle sticks and freeze for at least 3-4 hours until solid.
  5. To serve, run warm water over the mold to gently release the popsicles, and enjoy immediately or store in a freezer bag.

Notes

Use fresh fruits for best flavor. Store in a sealed freezer bag to prevent odor absorption, and consider meal prepping for quick snacks throughout the week. Customize with additional fruits or spinach.
