Ingredients
  

For the Marinade
  • 1/3 cup olive oil
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 1 1/2 tablespoons red wine vinegar
  • 1 1/2 tablespoons chopped fresh oregano
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
For the Skewers
  • 1 1/2 pounds boneless leg of lamb, trimmed of all fat and cut into 1-inch cubes

Method
 

Preparation
  1. Gather all ingredients.
  2. In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, oregano, minced garlic, salt, and black pepper until well combined.
  3. Add the cubed lamb to the marinade and stir until evenly coated.
  4. Cover with plastic wrap or a lid and refrigerate for at least 3 hours, or overnight for maximum flavor.
Grilling
  1. Preheat your grill to medium-high heat and lightly oil the grill grate.
  2. Thread the marinated lamb cubes onto skewers, reserving any leftover marinade.
  3. Grill the skewers for 10 to 12 minutes, basting with the reserved marinade and turning occasionally for even cooking.
  4. Cook to your desired level of doneness, then serve and enjoy your healthy, high-protein lamb skewers.

Notes

These skewers can be paired with a fresh salad or roasted vegetables for a heart-healthy meal. Leftover skewers can be stored in an airtight container in the refrigerator for up to three days, or frozen for up to three months. Reheat on the grill or in the microwave.
