- In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of a trifle dish to form an even layer.
- In a chilled bowl, whip the heavy cream until stiff peaks form and set aside.
- In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar, key lime juice, and key lime zest, mixing until fully incorporated.
- Gently fold the whipped cream into the key lime mixture using a rubber spatula until just combined.
- Spoon half of the key lime mixture over the prepared crust layer, then sprinkle some extra graham cracker crumbs on top. Add another layer of key lime mixture, culminating with more crumbs and additional lime zest for garnish.
- Cover with plastic wrap and chill in the fridge for at least 120 minutes before serving.
Notes
Consider using low-fat cream cheese to make it even healthier. You can prep components separately and assemble before serving. Store leftovers in the refrigerator for up to three days.
