Preparation
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, corn, bell pepper, onion, tomatoes, cilantro, and feta cheese.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Best served chilled. Can be stored in an airtight container in the refrigerator for up to three days. It can be made a day in advance for convenience.
