Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

  • Buttercream frosting
  • Food coloring (optional)
  • Sprinkles (optional)

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another large bowl, beat the butter, granulated sugar, and powdered sugar until fluffy.
  4. Add the egg and vanilla, then mix until combined.
  5. Gradually mix in the dry ingredients until a dough forms.
  6. Roll out the dough on a floured surface and cut out bunny shapes.
  7. Place the cookies on a baking sheet and bake for 8-10 minutes or until slightly golden.
  8. Let cool completely.
  9. Decorate with buttercream frosting, using food coloring to create different designs.
  10. Finish with sprinkles if desired.

These cookies can be made healthier by reducing sugar and using alternative ingredients. Great for meal prep and frozen until needed.
