Method
 

Preparation
  1. Season the salmon fillet generously with salt, pepper, and minced garlic.
  2. In a skillet, melt butter over medium heat and add sliced plantains. Cook until golden brown and caramelized.
Cooking
  1. Remove plantains and in the same skillet, heat olive oil until hot. Place the salmon skin-side down and sear for 4-5 minutes until crispy.
  2. Carefully flip the salmon, brush with a mixture of honey and soy sauce, and cook for an additional 3-4 minutes until flaky.
  3. Remove salmon and add olive oil if needed. Toss in spinach and sauté for a couple of minutes until wilted.
Serving
  1. Plate the glazed salmon alongside fried plantains and sautéed spinach.
  2. Slice the avocado and place it next to the salmon, sprinkling red chili flakes for a hint of spice.

Notes

For meal prep, cook portions ahead and store in airtight containers. Use an air fryer for a quicker salmon cook time. Substitute honey with maple syrup for a vegan-friendly option.
