Preparation
- Season the salmon fillet generously with salt, pepper, and minced garlic.
- In a skillet, melt butter over medium heat and add sliced plantains. Cook until golden brown and caramelized.
Cooking
- Remove plantains and in the same skillet, heat olive oil until hot. Place the salmon skin-side down and sear for 4-5 minutes until crispy.
- Carefully flip the salmon, brush with a mixture of honey and soy sauce, and cook for an additional 3-4 minutes until flaky.
- Remove salmon and add olive oil if needed. Toss in spinach and sauté for a couple of minutes until wilted.
Serving
- Plate the glazed salmon alongside fried plantains and sautéed spinach.
- Slice the avocado and place it next to the salmon, sprinkling red chili flakes for a hint of spice.
Notes
For meal prep, cook portions ahead and store in airtight containers. Use an air fryer for a quicker salmon cook time. Substitute honey with maple syrup for a vegan-friendly option.
