Ingredients
  

For the vegetables
  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
For the glaze
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
For garnish
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on a baking sheet.
Cooking
  1. Roast for 20-25 minutes or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
  2. Remove from the oven and transfer to a serving dish.
  3. Garnish with chopped fresh parsley.
  4. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. If freezing, use a freezer-safe container for up to 2 months. Consider using leftovers in soups or stir-fries.
