For the Chicken
  • 2 pieces Chicken leg quarters Main protein source.

For the Rice and Salad

Method
 

Preparation
  1. In a mixing bowl, combine honey, soy sauce, minced garlic, olive oil, paprika, salt, and black pepper. Mix well and coat the chicken legs.
  2. Let the chicken marinate for at least 30 minutes.
Roasting the Chicken
  1. Preheat your oven to 400°F (200°C).
  2. Place the marinated chicken legs on a baking sheet lined with parchment paper.
  3. Roast the chicken for about 35-40 minutes, brushing with extra marinade halfway through.
Cooking the Rice
  1. While the chicken roasts, prepare the cooked white rice according to package instructions.
Preparing the Salad
  1. In a large bowl, combine the lettuce, cucumber, tomato, and red onion.
  2. Drizzle with olive oil and lemon juice, and season lightly with salt and pepper. Toss well.
Serving
  1. Once the chicken is cooked, serve on a plate alongside the steamed rice and fresh garden salad.

Notes

For a healthy variation, use skinless chicken thighs. Store leftovers in airtight containers for lunch or dinner. Salad is best eaten fresh.
