- Start by chopping the onion and mincing the garlic.
Cooking
- In a large skillet over medium heat, add 2 tablespoons of olive oil.
- Once heated, place the chicken thighs in the pan. Cook them for about 5-7 minutes until they are golden brown on both sides.
- Add the chopped onion and minced garlic to the skillet. Cook for an additional 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
- Add 1.5 cups of long-grain white rice to the skillet. Stir it together with the chicken and onions.
- Pour in 3 cups of chicken broth (or water), 1 cup of barbecue sauce, and 0.5 cup of honey. Stir well to combine.
- Bring the mixture to a boil. Once boiling, reduce heat to low, cover the skillet, and let it simmer for about 20 minutes.
- After 20 minutes, remove the skillet from heat and let it sit for 5 minutes. Then fluff the rice with a fork and serve hot.
Notes
For a healthier version, consider using brown rice instead of white. This dish is suitable for meal prep and can be stored in the fridge for 3-4 days. Refrigerate leftovers in airtight containers.
