Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Peel, seed, and dice the butternut squash into 1-inch pieces. Dice the yellow potatoes and carrots, and mince the garlic and onion.
Roasting
  1. On a baking sheet, combine the diced butternut squash, yellow potatoes, 2 tablespoons of olive oil, salt, black pepper, and rosemary. Toss until well coated and spread evenly on the baking sheet.
  2. Roast for about 25 to 30 minutes, or until tender and slightly caramelized.
Cooking Beef
  1. While the squash is roasting, heat a large skillet over medium heat. Add 1-2 tablespoons of olive oil and sauté the diced onion and minced garlic until fragrant.
  2. Add the ground beef, browning thoroughly and breaking it apart as it cooks. Season with salt and pepper.
Adding Vegetables
  1. Mix in the diced carrots and any remaining rosemary, allowing them to sauté with the beef for about 5-7 minutes until slightly tender.
Combining Mixtures
  1. Once the butternut squash mixture is finished roasting, remove it from the oven and add it to the skillet with the beef and vegetables. Gently mix everything together.
Serving
  1. Spoon the butternut squash and ground beef mixture onto plates, garnishing with fresh herbs if desired. Serve warm.

Notes

This dish is excellent for meal prep; store leftovers in an airtight container for up to 4 days. A plant-based alternative can be made using lentils or black beans. Feel free to customize with your favorite herbs and spices.
