Preparation
- Wash the peaches thoroughly under running water. Blanch in boiling water for about 30 seconds, then transfer to an ice bath.
- Peel the peaches, remove pits, and crush them to measure exactly 4 cups.
- Wash your canning jars, lids, and bands in hot, soapy water. Rinse and keep the jars hot.
Cooking
- In a large saucepan, combine crushed peaches and lemon juice. Stir to blend.
- Add the powdered pectin and bring to a full rolling boil over high heat, stirring constantly.
- Add all the sugar at once once boiling and stir until completely dissolved.
- Boil hard for exactly 1 minute while stirring continuously.
- Remove from heat and skim off any foam from the surface.
- Using a ladle, fill hot jars with peach jam, leaving ¼-inch headspace.
- Wipe rims, place lids on jars, and screw on bands until fingertip tight.
- Process jars in boiling water bath for 10 minutes. Adjust for altitude if necessary.
- Remove jars and allow to cool upside down on a clean towel for 12-24 hours.
Notes
Use ripe peaches for the best flavor and feel free to experiment with spices. Store sealed jars in a cool, dark place.
