  • 4 cups Crushed Fresh Peaches About 3 pounds of fresh peaches.
  • 2 tablespoons Bottled Lemon Juice Adds acidity to preserve flavor.
  • 1 package (1.75 ounces) Powdered Fruit Pectin Ensures proper setting of the jam.
  • 5 cups Granulated Sugar Can be reduced based on taste.
  • ½ teaspoon Ground Cinnamon Enhances overall flavor.
  • 1 pinch Ground Nutmeg or Cloves Optional for added depth of flavor.
  • 1 teaspoon Vanilla Extract Add after cooking for aroma.

Method
 

Preparation
  1. Wash the peaches thoroughly under running water. Blanch in boiling water for about 30 seconds, then transfer to an ice bath.
  2. Peel the peaches, remove pits, and crush them to measure exactly 4 cups.
  3. Wash your canning jars, lids, and bands in hot, soapy water. Rinse and keep the jars hot.
Cooking
  1. In a large saucepan, combine crushed peaches and lemon juice. Stir to blend.
  2. Add the powdered pectin and bring to a full rolling boil over high heat, stirring constantly.
  3. Add all the sugar at once once boiling and stir until completely dissolved.
  4. Boil hard for exactly 1 minute while stirring continuously.
  5. Remove from heat and skim off any foam from the surface.
  6. Using a ladle, fill hot jars with peach jam, leaving ¼-inch headspace.
  7. Wipe rims, place lids on jars, and screw on bands until fingertip tight.
  8. Process jars in boiling water bath for 10 minutes. Adjust for altitude if necessary.
  9. Remove jars and allow to cool upside down on a clean towel for 12-24 hours.

Notes

Use ripe peaches for the best flavor and feel free to experiment with spices. Store sealed jars in a cool, dark place.
