Preparation
- Preheat your oven to 375°F (190°C) and prepare your muffin tin by lining it with paper liners or greasing it well.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1/2 teaspoon of cinnamon.
- In another bowl, mix together the melted butter, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced peaches.
- In a small bowl, combine the brown sugar, 1/4 cup flour, and 1 teaspoon cinnamon. Add the softened butter and mix until crumbly.
- Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping over each muffin.
Baking
- Bake in preheated oven for 18-22 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool slightly in the tin before transferring them to a wire rack.
- Enjoy the muffins warm or at room temperature.
