Method
 

Preparation
  1. In a large mixing bowl, combine the shredded chicken, shredded cheese, refried beans, diced onion, garlic powder, cumin, and chili powder. Mix well.
Tortilla Preparation
  1. Heat a large skillet over medium heat. Warm the tortillas for a few seconds on each side until pliable.
Filling the Tortillas
  1. Place about 1/3 cup of the chicken mixture in the center of each tortilla. Fold over the sides and roll each tortilla tightly.
Frying
  1. In the same skillet, heat vegetable oil over medium-high heat. Carefully place the chimichangas seam-side down and fry until golden brown on all sides, about 2-3 minutes per side.
Draining and Serving
  1. Use paper towels to drain excess oil from the fried chimichangas. Serve hot with sour cream, salsa, and guacamole.

Notes

For healthier chimichangas, bake at 425°F (220°C) for 15-20 minutes. Prepare fillings ahead for meal prep and use leftovers in burritos or salads.
