Ingredients
  

For the Cordials
  • 20 ounces maraschino cherries, approx 75 pieces Stemless cherries
  • 4 tablespoons salted butter Use room temperature butter for easy blending
  • 4 tablespoons light corn syrup
  • 2 tablespoons amaretto liquor Optional, can be replaced with almond extract or vanilla
  • 4-5 cups powdered sugar Add until dough reaches soft Play-Doh consistency
For the Coating
  • 10 ounces semi sweet or dark chocolate
  • 4 ounces chocolate almond bark
  • Sprinkles Optional for decoration

Method
 

Preparation
  1. Drain maraschino cherries and dry on paper towels.
  2. Combine softened butter and corn syrup in a mixing bowl. Whip with an electric mixer until light and fluffy.
  3. Add amaretto liquor and mix again.
  4. Add two cups of powdered sugar, mix until combined. Continue adding powdered sugar until dough reaches a soft Play-Doh consistency.
Shaping
  1. Take a small ball of dough, slightly bigger than a cherry, and flatten it in your palm.
  2. Place a dried cherry in the middle, wrap dough around it, ensuring it’s fully covered and sealed.
  3. Gently roll the ball between your hands to shape, then set aside on parchment paper. Repeat until all cherries are wrapped.
Coating
  1. Melt dark chocolate with chocolate almond bark in a microwave-safe bowl, heating in 15-30 second intervals, stirring after each until smooth.
  2. Carefully dip each wrapped cherry into melted chocolate. Let excess drip off, then set on a parchment-lined sheet.
  3. After all cherries are dipped and hardened, decorate with additional melted chocolate and sprinkles, if desired.

Notes

Store the cordials in a cool, dry place in an airtight tin or box. If you live in a warm area, keep them in the fridge. Let them come to room temperature for 10 minutes before serving.
