Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cottage cheese, eggs, milk, honey, and vanilla extract. Mix well.
- In another bowl, mix together oats, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Fold in the blueberries gently.
Baking
- Pour the mixture into a greased baking dish and spread evenly.
- Bake for 30-35 minutes or until set and golden on top.
- Let cool for a few minutes before slicing and serving.
Notes
Store leftovers in the refrigerator for up to 5 days, or freeze individual portions for up to 3 months. Reheat in the microwave for 30-60 seconds.
