  • 1 cup mixed vegetables (carrots, peas, corn) Boosts nutrition and visual appeal.
  • 2 large eggs, beaten Adds protein and richness.
  • 3 tablespoons soy sauce Can be replaced with low-sodium version.
  • 1 tablespoon sesame oil Adds a distinct nutty aroma.
  • 1 bunch green onions, chopped (for garnish) Brightens the dish with fresh notes.

Method
 

Preparation
  1. Begin by heating the vegetable oil in a large skillet or wok over medium heat.
  2. Once the oil is hot, add the diced onion and minced garlic. Sauté until fragrant and the onions are translucent.
  3. Stir in the mixed vegetables and cook until tender.
  4. Push the cooked vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and scramble until fully cooked.
  5. Add the cooked rice, soy sauce, and sesame oil to the skillet. Stir to combine.
  6. Cook for another 3-5 minutes, stirring occasionally.
  7. Garnish with chopped green onions before serving.

Notes

For best flavor, use day-old rice. You can also try different vegetables like broccoli or bell peppers. Prepare all ingredients beforehand for quick meals.
