Heirloom Tomato Sandwich

A delicious and healthy sandwich made with fresh heirloom tomatoes, creamy white bean spread, and avocados, perfect for meal prep or a quick dinner.

Ingredients
  

White Bean Spread
  • 1.5 cups cooked cannellini beans, drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic
  • 3 tablespoons lemon juice
  • 1 teaspoon capers
  • Sea salt and freshly ground black pepper, to taste
Sandwich Assembly
  • 8 slices WFM Seeduction® bread, toasted
  • 4 leaves butter lettuce
  • 3 heirloom tomatoes, sliced
  • 2 avocados, sliced
  • 8 leaves fresh basil
  • Pinch of smoked paprika (optional)
  • Sprinkle of hemp seeds (optional)

Method
 

Preparation
  1. In a blender, puree the cannellini beans, olive oil, garlic, lemon juice, and capers until smooth.
  2. Season the mixture with sea salt and freshly ground black pepper to taste. Chill the mixture in the refrigerator until you're ready to use it.
Cooking
  1. Toast the WFM Seeduction® bread slices until golden brown.
Assembly
  1. Spread a generous amount of the white bean puree on each slice of bread.
  2. Add a leaf of butter lettuce, followed by slices of heirloom tomatoes and avocado.
  3. Top with fresh basil, a sprinkle of sea salt, black pepper, and if you prefer, a pinch of smoked paprika and a sprinkle of hemp seeds.
  4. Place another slice of bread on top, cut the sandwich in half, and serve.

Notes

For meal prep, prepare white bean puree in advance and store it in the fridge. Assemble the sandwich just before serving for optimal freshness. Can be paired with a salad or fresh fruit for a well-rounded meal.
