Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheet with parchment paper.
  3. In a large mixing bowl, combine the rolled oats, mashed peaches, almond butter (or peanut butter), honey (or maple syrup), vanilla extract, cinnamon, and salt. Mix until well combined.
  4. If desired, fold in chopped nuts or chocolate chips.
  5. Drop spoonfuls of the cookie mixture onto the prepared baking sheet and flatten slightly.
Baking
  1. Bake in the preheated oven for 12-15 minutes until the edges turn golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be made ahead and stored in an airtight container for up to a week. They can also be frozen for up to three months. Variations include using different fruits or spices.
