  • 1 pound lean ground beef
  • 1 cup bell peppers (red, yellow, green), sliced
  • 1 cup cooked brown rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
Seasoning and Garnish
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until softened.
  2. Add ground beef and cook until browned.
  3. Stir in bell peppers and cook until they’re tender.
  4. Add cooked rice and soy sauce, mixing well.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions.

Notes

For extra flavor, add a small wedge of lime or sprinkle sesame seeds on top. This meal is also good for meal prep and freezes well.
