  • 4 pieces russet potatoes
  • 1/2 cup melted butter

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the russet potatoes and slice them thinly, keeping the slices attached at the bottom (do not cut all the way through).
  3. Place the potatoes in a baking dish.
  4. Drizzle melted butter over the potatoes, ensuring it seeps between the slices.
  5. Season with salt and pepper.
Cooking
  1. Bake in the preheated oven for about 45-50 minutes, or until the potatoes are crispy on the outside and tender inside.
  2. Serve warm as a side dish.

Notes

Hasselback potatoes can be topped with Greek yogurt or cottage cheese for extra protein. Pair with a green salad for a complete meal. For meal prep, wash and slice in advance, storing in water to prevent browning.
