  • 1 lb ground beef
  • 1 medium onion, chopped adds sweetness and flavor
  • 2 cloves garlic, minced enhances flavor
  • 3 medium carrots, diced for sweetness and texture
  • 2 stalks celery, diced for crunch and flavor
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth can substitute with vegetable broth
  • 1 cup green beans, cut fresh or frozen
  • 1 cup corn, frozen or canned
  • 2 medium potatoes, diced
  • 1 teaspoon Italian seasoning adds aromatic flavor
  • to taste salt and pepper adjust according to preference
  • 2 tablespoons olive oil for sautéing

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until onions are translucent.
  3. Add ground beef to the pot, and cook and stir until browned.
  4. Stir in the carrots, celery, and potatoes, cooking for a few minutes.
  5. Add the diced tomatoes, beef broth, green beans, corn, Italian seasoning, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes until vegetables are tender.
  7. Adjust seasoning if needed before serving.

Notes

Serve hot with desired toppings such as shredded cheese, fresh herbs, or a dollop of sour cream. Pair with warm bread or a simple salad for a complete meal. Can be stored in the refrigerator for up to 4 days or frozen up to 3 months.
