  • 1/4 cup Heavy Cream Can substitute with coconut cream

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, buttermilk, and vanilla extract. Pour the wet mixture into the dry ingredients and mix until just combined.
  4. Line your cupcake pan with cupcake liners and fill each liner about two-thirds full with the batter.
Baking
  1. Place the cupcake pan in the preheated oven and bake for 18-20 minutes. Test with a toothpick to ensure it comes out clean.
  2. Allow the cupcakes to cool in the pan for about 10 minutes before transferring them to a wire rack. Let them cool completely.
Filling and Frosting
  1. Remove a small amount of cake from the center of each cooled cupcake and fill with 1-2 teaspoons of raspberry or strawberry jam.
  2. Beat the softened butter until creamy, then add powdered sugar and heavy cream until you reach the desired consistency. Mix in red food coloring if using.
  3. Frost the top of each filled cupcake using a piping bag to create the bite effect.

Notes

Store cupcakes in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave before serving for warm cupcakes. Variations include using different fruit jams for the filling.
