Preparation
- Preheat your oven to 350°F (175°C) and line muffin tin with cupcake liners.
- In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.
- Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.
- In another bowl, whisk together the buttermilk, sour cream, and brewed coffee until combined. Gradually add this to the creamed mixture and beat until smooth.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. Combine dry ingredients with wet ingredients mixing just until combined.
- Gently fold in the crushed Oreo cookies.
- Evenly distribute the batter into the lined muffin tin, filling each cup about two-thirds full.
- Bake for about 18-20 minutes, until a toothpick inserted comes out clean. Let cool in the tin for 5 minutes before transferring to a cooling rack.
Frosting
- While cupcakes cool, prepare the frosting. Beat softened butter until creamy.
- Gradually add confectioner's sugar and mix until smooth. Adjust with milk for desired consistency.
- Fold in the remaining crushed Oreos to create a cookies and cream frosting.
Assembly
- Once cooled, generously frost the cupcakes with the cookies and cream frosting, using edible eyes and an Oreo on top to create a bat design.
