  • 1 lb Ground Turkey Lower in fat than traditional beef.
  • 2 medium Bell Peppers Any color, diced.
  • 1 medium Onion Diced.
  • 1 tbsp Taco Seasoning Homemade or store-bought.
  • 1 can Black Beans Rinsed and drained for added fiber.
  • 1 can Diced Tomatoes For moisture and acidity.
  • 1 cup Corn Fresh or canned.
  • 1 cup Shredded Cheese Optional; use reduced-fat for a healthier option.

Method
 

Preparation
  1. Heat a non-stick skillet over medium heat. If not non-stick, add a small amount of oil.
  2. Add diced onions and bell peppers to the skillet. Sauté until soft, about 5 minutes.
  3. Push the vegetables to one side and add the ground turkey. Cook until browned and no longer pink, about 6-7 minutes.
  4. Sprinkle taco seasoning over the turkey and mix well. Optionally add a splash of water or broth.
  5. Stir in black beans and diced tomatoes. Let simmer for 5 minutes.
  6. Add corn and stir gently. Cook for another 2-3 minutes, then remove from heat.
  7. If desired, sprinkle shredded cheese on top before serving.

Notes

For added healthy fats, serve with avocado or guacamole. Ideal for meal prep; store in sealed containers for up to 4 days.
