  • 1 lb lean ground beef Choose an 80/20 or 90/10 blend for a healthier option.
  • 2 tbsp tomato paste Adds a rich, savory base.
  • 1/4 cup beef broth Keeps the beef moist while cooking.
  • 1 tbsp taco seasoning Brings a delightful zing.
Tortillas and Cheese
  • 4 large flour tortillas Use 10-inch tortillas for better filling capacity.
  • 1.5 cups bright orange cheddar cheese Sharp cheddar melts beautifully.
  • 1.5 cups white Monterey Jack cheese Adds creaminess.
Cooking Ingredients
  • 1 tbsp vegetable oil For pan-toasting the quesadillas.
  • 2 tbsp fresh green cilantro Adds a fresh touch.
  • 1/2 cup smooth white sour cream Perfect for dipping.

Method
 

Preparation
  1. Heat a non-stick skillet over medium heat.
  2. Add the ground beef, breaking it apart as it cooks. Stir until browned, approximately 5-7 minutes.
  3. Stir in the tomato paste, beef broth, and taco seasoning, and let it simmer for about 3-5 minutes.
  4. Lay out the tortillas and divide the beef mixture evenly among them. Sprinkle both cheeses over the top.
Cooking
  1. Fold each tortilla in half to encase the filling.
  2. Reheat the skillet and add vegetable oil. Place the folded quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown.
  3. Remove the quesadillas from the skillet, cut into wedges, and sprinkle fresh cilantro on top.
Serving
  1. Serve the quesadillas with smooth sour cream on the side for dipping.

Notes

For a healthier variation, substitute ground beef with turkey or a plant-based option. These quesadillas can be made in advance and stored in the fridge for up to three days.
