Preparation
- Heat a non-stick skillet over medium heat.
- Add the ground beef, breaking it apart as it cooks. Stir until browned, approximately 5-7 minutes.
- Stir in the tomato paste, beef broth, and taco seasoning, and let it simmer for about 3-5 minutes.
- Lay out the tortillas and divide the beef mixture evenly among them. Sprinkle both cheeses over the top.
Cooking
- Fold each tortilla in half to encase the filling.
- Reheat the skillet and add vegetable oil. Place the folded quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown.
- Remove the quesadillas from the skillet, cut into wedges, and sprinkle fresh cilantro on top.
Serving
- Serve the quesadillas with smooth sour cream on the side for dipping.
Notes
For a healthier variation, substitute ground beef with turkey or a plant-based option. These quesadillas can be made in advance and stored in the fridge for up to three days.
