Preparation
  1. Heat your skillet over medium heat. Add the ground beef and cook until browned, draining the excess fat.
  2. Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until softened, about 3-5 minutes.
  3. Stir in the diced potatoes and taco seasoning. Toss to coat all ingredients evenly.
  4. Cover the skillet and cook for 15-20 minutes until the potatoes are tender, stirring occasionally.
  5. Season with salt and pepper according to your preference.
