  • 1 cup Cherry Tomatoes Rich in antioxidants.
  • 1 Red Onion Adds robust flavor that becomes sweeter when grilled.
Marinade
  • 3 tablespoons Olive Oil Enhances the flavors and keeps it heart-friendly.
  • 2 tablespoons Balsamic Vinegar Provides a tangy flavor.
  • 1 teaspoon Dried Oregano Adds complexity and fragrant notes.

Method
 

Preparation
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper.
  2. Prepare the vegetables by cutting the bell peppers into strips, slicing the zucchini, and quartering the cherry tomatoes and red onion.
  3. In a large zip-top bag or bowl, combine the chopped vegetables and pour in the marinade. Toss to coat evenly. Allow marinating for at least 15 minutes.
Cooking
  1. Preheat your grill to medium-high heat. If using a grill basket, ensure it is well-oiled.
  2. Carefully place the marinated veggies onto the grill. Cook for about 10 minutes, turning occasionally until tender with grill marks.
  3. Remove the veggies from the grill and garnish with fresh herbs before serving.

Notes

Great for meal prep; store grilled veggies in an airtight container in the refrigerator for up to 4 days. Consider adding asparagus or mushrooms for more variety.
