  • 2 pieces Salmon fillets Skin-on for more flavor
  • 1 bunch Asparagus Trimmed
  • 2 tablespoons Olive oil Extra virgin for best flavor
  • 1 teaspoon Garlic powder For seasoning
  • 1 teaspoon Lemon juice Freshly squeezed
  • Salt to taste Salt For seasoning
  • Pepper to taste Black pepper For seasoning

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic powder, lemon juice, salt, and pepper.
  3. Brush the salmon fillets with the mixture and let them marinate for 10 minutes.
  4. Toss the asparagus in the remaining marinade.
Cooking
  1. Place the salmon fillets on the grill skin side down.
  2. Add the asparagus to the grill next to the salmon.
  3. Cook for about 6-8 minutes on each side or until salmon is cooked through and asparagus is tender.
  4. Remove from grill and let rest for 2 minutes.
  5. Plate the salmon and asparagus, drizzling any leftover marinade over the top.

Notes

Serve with a side of quinoa or a light salad for a complete meal. Perfect for a cozy Valentine’s dinner.
